Chicken Athena (2 ways)

PREP TIME: 15 min.
CROCK POT COOK TIME: 4 hours / or
MAKES: 6 servings


6 boneless skinless chicken breast halves
2 medium chopped onions
1 can of sliced or whole black olives (whatever your preference)
1 24oz can of Hunts Traditional Pasta Sauce
2 tablespoons of lemon juice
1 tablespoon of balsamic vinegar
1/2 teaspoon of salt
*1 tablespoon olive oil (for stove top version)

Crock Pot Directions

  1. Place chicken in a 3-qt. slow cooker. Add the remaining ingredients. Cover and cook on low for 4 hours or until a thermometer reads 170°. Yield: 6 servings.

Stove Top Directions

**If you are pressed for time, cut chicken into bite size pieces**

  1. Cook chicken and onions in a skillet with some olive oil.
  2. Once lightly browned, add in balsamic vinegar, salt, and lemon juice and continue cooking for another minute.
  3. Pour in the entire can of pasta sauce and simmer on low for 10 minutes.
