Gourmet Stuffed Blue Cheese Burger with Drunken Caramelized Onions

These stuffed burgers are a wonderful way to step-up burger night!

PREP TIME: 15 minutes
COOK TIME: 25 minutes

INGREDIENTS(Burgers):

2 lbs ground beef
1/2 c crumbled blue cheese
1 tsp coarse sea salt
1 tsp freshly ground black pepper
Dijon mustard (optional)
4-6 amazingly awesome hamburger rolls

INGREDIENTS(Drunken onions):

2 large onions
1/4 c extra virgin olive oil (evoo)
1/2 tsp coarse sea salt
1 tsp freshly ground black pepper
1 tsp thyme
1 c Zinfandel

Drunken Onion Directions:

1. Peel and slice the onions into half moons and set aside.

2. Heat a large sauce pan over high heat.  When pan is hot, pour in the evoo.  Once the oil is hot, add the onions, salt, and pepper.  Decrease the heat to medium-high and cook, stirring occasionally until the onions are caramelized (approximately 8-10 minutes).

3. Add the thyme and cook 1 additional minute.

4. Pour in the wine and cook for 4-5 minutes.

5. Take the pan off the heat and let it cool while you make the burgers.

Stuffed Burger Directions:

1.Place a large skillet on medium-high heat.

2. Stuff each burger with about 2 tbs of the crumbled blue cheese.  I used a Stufz which made the process rather painless (this method creates 4 burgers).

3. Place burgers on skillet and cover.  Cook for about 6-7 minutes and then flip burgers, cover and cook an additional 6-7 minutes (cooked medium).  I like mine well done so, I cook them for about 10 minutes per side 🙂

4. When burgers are cooked to your preference, place them on rolls and spoon on some of the drunken onions. I like to add a little dijon mustard on the bottom roll before I placing the patty on top – it complements to onions very nicely.  Enjoy!
